- Put water in a large pot.
- Cut ends off potatoes and wash thoroughly.
- Place potatoes in water.
- Cover and boil for about 30 to 35 minutes, until potatoes are tender.
- Slide skin off potatoes.
- Preheat oven to 350°F (175°C).
- Put potatoes in a large mixing bowl.
- Use an electric mixer to blend potatoes until strings are out.
- Add softened butter.
- Beat at medium speed until well combined.
- In a separate bowl, combine sugar, honey, nutmeg, salt, vanilla, lemon juice, and cinnamon.
- Gradually add evaporated milk and eggs to the mixture, beating well after each addition.
- Divide the mixture evenly into three pie pastries.
- Bake for about 1 hour, or until a knife inserted in the center comes out clean.
