Dorothy's Potato Pie combines creamy mashed potatoes with warm spices and a sweet honey flavor, creating a comforting dessert perfect for family gatherings and special occasions.

Ingredients

  • 3 or 4 medium potatoes
  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1/4 cup honey
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon lemon juice
  • pinch of salt
  • 1 1/2 teaspoons nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 to 1/2 cup evaporated milk
  • 3 eggs

Instructions

  1. Put water in a large pot.
  2. Cut ends off potatoes and wash thoroughly.
  3. Place potatoes in water.
  4. Cover and boil for about 30 to 35 minutes, until potatoes are tender.
  5. Slide skin off potatoes.
  6. Preheat oven to 350°F (175°C).
  7. Put potatoes in a large mixing bowl.
  8. Use an electric mixer to blend potatoes until strings are out.
  9. Add softened butter.
  10. Beat at medium speed until well combined.
  11. In a separate bowl, combine sugar, honey, nutmeg, salt, vanilla, lemon juice, and cinnamon.
  12. Gradually add evaporated milk and eggs to the mixture, beating well after each addition.
  13. Divide the mixture evenly into three pie pastries.
  14. Bake for about 1 hour, or until a knife inserted in the center comes out clean.
