Ingredients

  • 6 large sweet potatoes
  • 1/2 cup margarine
  • 6 tablespoons apple juice
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon ginger
  • Cocomallow Topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut each baked sweet potato in half lengthwise and scoop out the centers, leaving shells intact.
  3. Mash the scooped-out sweet potato flesh in a bowl.
  4. Add margarine, apple juice, brown sugar, and ginger to the mashed sweet potatoes and beat until fluffy.
  5. Spoon the sweet potato mixture back into the potato shells.
  6. Top each filled shell with Cocomallow Topping.
  7. Bake in the preheated oven for 20 minutes until heated through and topping is golden.
