Double-Cheese Potato Bake

Ingredients

  • 3/4 c. seasoned dry bread crumbs, divided
  • 3 c. mashed potatoes
  • 2 eggs
  • 1/2 c. grated Parmesan cheese
  • 8 oz. Mozzarella cheese, thinly sliced
  • 2 Tbsp. butter or margarine, softened

Instructions

  1. Sprinkle 1/4 cup bread crumbs in greased shallow baking dish; set aside.
  2. Mix well mashed potatoes, eggs and Parmesan cheese. Spread 1/2 in prepared baking dish.
  3. Top with Mozzarella slices. Spread remaining potato mixture over cheese.
  4. Mix remaining bread crumbs with butter and sprinkle on top.
  5. Bake in preheated 350° oven for 50 to 60 minutes, until potatoes are firm and crumbs are browned.
  6. Let stand 15 minutes.
  7. Serves 4.
