Double Chocolate Souffle

- Preheat oven to 350°F (175°C).
- Coat inside of a 2 1/2-quart souffle dish with nonstick cooking spray.
- Separate eggs, placing yolks in a small bowl and whites in a large bowl.
- Place milk, sugar, flour, and salt in a 2-cup jar with lid.
- Shake until smooth.
- Pour into a saucepan; stir in cocoa powder.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Remove from heat. Add vanilla extract.
- Stir a little hot mixture into the egg yolks; then stir yolk mixture back into the saucepan.
- Beat egg whites and cream of tartar at high speed until stiff peaks form, but not dry.
- Gently and thoroughly fold the yolk mixture and chocolate pieces into the egg whites, cutting down through the center of whites, across the bottom of the bowl, and up the side, turning the bowl as you fold.
- Pour the mixture into the prepared souffle dish.
- Bake for 35 to 45 minutes until puffy and the souffle shakes slightly when the rack is gently moved.
