Ingredients

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 3 tablespoons sugar
  • 1 tablespoon grated orange rind
  • 1/3 cup butter or margarine
  • 1 (11 oz.) can mandarin oranges, drained
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1 tablespoon sugar

Instructions

  1. Combine flour, baking powder, 3 tablespoons sugar, and grated orange rind in a large bowl; stir well.
  2. Cut in butter with a pastry blender until the mixture is crumbly.
  3. Add drained mandarin oranges, milk, and lightly beaten egg; stir just until dry ingredients are moistened.
  4. Turn dough out onto a heavily floured surface and knead lightly 4 or 5 times.
  5. Pat dough into a 6-inch circle on a greased baking sheet.
  6. Cut into 8 wedges and separate them slightly.
  7. Sprinkle with 1 tablespoon sugar.
  8. Bake at 400°F (200°C) for 15 to 20 minutes or until lightly browned.
