Ingredients

  • 8 slices thin-sliced bread
  • 1/4 cup preserves
  • 3/4 cup pancake mix
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Trim crusts from the bread slices.
  2. Spread preserves on four slices of bread.
  3. Top with the remaining four slices to form sandwiches.
  4. Cut each sandwich into quarters.
  5. Combine pancake mix, milk, and egg in a bowl and stir until smooth.
  6. Dip the sandwich quarters into the batter.
  7. Fry in hot deep fat until browned, about 1 to 2 minutes.
  8. Sprinkle with powdered sugar before serving.
