Ingredients

  • 1 lb dried apricots
  • 3/4 cup sugar
  • 1 1/4 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • dash of salt
  • dash of nutmeg
  • pastry for two 9-inch pie crusts

Instructions

  1. Soak dried apricots overnight in the refrigerator.
  2. Combine sugar, cornstarch, cinnamon, salt, and nutmeg in a bowl.
  3. Add the soaked apricots to the mixture and stir well.
  4. Cook the mixture in the microwave for 10 minutes, then let it cool before filling the pie crust.
  5. Place a few pieces of oleo (margarine) on top of the filling, then cover with the top crust.
  6. Brush the top crust with milk and sprinkle with sugar.
  7. Bake at 375°F until the crust is golden and the filling is bubbly.
