Ingredients

  • 2 c. honey
  • 1 c. vinegar
  • 2 cinnamon sticks
  • 6 whole cloves
  • fresh beets

Instructions

  1. Fill jars with beets to within an inch of the jar rim.
  2. Heat honey, vinegar, cinnamon sticks, and cloves to boiling.
  3. Pour the hot mixture over the beets, leaving one-half inch of headspace.
  4. Place lids on the jars and put them in a water bath canner.
  5. Process the jars in boiling water for about one hour to seal.
