Dried Cranberry Salsa
Ingredients
- 1 1/2 cups diced tomatoes ⓘ
- 3/4 cup jicama, diced ⓘ
- 1 1/2 cups red bell peppers or 1 1/2 cups green bell peppers, diced ⓘ
- 1/4 cup red onion, diced ⓘ
- 1/2 jalapeno pepper, minced
- 4 tablespoons dried cranberries ⓘ
- 2 tablespoons fresh cilantro, chopped ⓘ
- 2 1/2 tablespoons lime juice ⓘ
- 1/4 teaspoon ground black pepper ⓘ
- 1 teaspoon salt ⓘ
Instructions
- Combine all ingredients in a medium bowl.
- Let stand 30 minutes at room temperature to allow flavors to mix.
- Serve at room temperature.
- Cover and refrigerate any remaining salsa.
