Ingredients

  • 2 cups mixed dry beans
  • ham hock or 1.5 pounds ground beef
  • 1 can beef broth
  • 1 can tomato sauce
  • 1 chopped onion
  • 1 large can whole tomatoes
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • Juice of one lemon

Instructions

  1. Wash the mixed dry beans, place in a large kettle, cover with water, add 2 tablespoons of salt, and soak overnight.
  2. Drain the soaked beans.
  3. Add 2 quarts of water, the ham hock or browned ground beef with fat removed to the kettle.
  4. Cook all day in a crockpot or simmer on low heat on the stove.
  5. Add the remaining ingredients: beef broth, tomato sauce, chopped onion, whole tomatoes, chili powder, garlic powder, and lemon juice.
  6. Simmer the soup for at least 30 minutes before serving.
