Dry Bean Soup

- Wash the mixed dry beans, place in a large kettle, cover with water, add 2 tablespoons of salt, and soak overnight.
- Drain the soaked beans.
- Add 2 quarts of water, the ham hock or browned ground beef with fat removed to the kettle.
- Cook all day in a crockpot or simmer on low heat on the stove.
- Add the remaining ingredients: beef broth, tomato sauce, chopped onion, whole tomatoes, chili powder, garlic powder, and lemon juice.
- Simmer the soup for at least 30 minutes before serving.
