Ingredients

  • 1 pkg lemon Jell-O
  • 1 1/4 cups hot water
  • 3/4 cup sugar
  • Pinch of salt
  • Juice and rind of 2 lemons
  • 1 tall can evaporated milk
  • 1 frozen graham cracker crust

Instructions

  1. Mix the lemon Jell-O, hot water, sugar, salt, and lemon juice together until the Jell-O dissolves.
  2. Chill the evaporated milk until flaky or slightly thickened.
  3. Whip the chilled Jell-O mixture until well combined and slightly frothy.
  4. Add the whipped evaporated milk to the Jell-O mixture and fold gently until combined.
  5. Pour the mixture into an 8 x 10-inch pan with a graham cracker crust.
  6. Refrigerate until set before serving.
