Ingredients

  • 2/3 cup salad oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 cup grated carrots
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon cinnamon

Instructions

  1. Combine all ingredients in a large bowl; mix 2 minutes on medium speed.
  2. Spoon the batter into a greased loaf pan.
  3. Bake at 350°F for 55 minutes, or until done.
