These tangy and sweet Lemon Bars feature a buttery crust topped with a creamy lemon cheesecake layer, perfect for citrus lovers and dessert gatherings.

Ingredients

  • 1 package lemon cake mix
  • 1/2 cup butter, softened
  • 1 egg
  • 1 lemon frosting
  • 8 oz cream cheese, softened
  • 2 eggs

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9-inch pan on the bottom only.
  3. Combine lemon cake mix, softened butter, and egg in a large bowl until well mixed.
  4. Press the mixture into the prepared pan to form the crust.
  5. In a large bowl, blend the frosting mix and softened cream cheese until smooth.
  6. Reserve 1/2 cup of the frosting mixture for frosting the bars later.
  7. Add 2 eggs to the remaining frosting mixture and beat for 3 to 5 minutes.
  8. Spread this mixture evenly over the crust.
  9. Bake at 350°F for 30 to 40 minutes until set.
  10. Allow to cool completely.
  11. Frost the cooled bars with the reserved frosting.
