Easy Cheesy Enchiladas

Ingredients

  • 1 1/2 lb. ground beef
  • 1 small, chopped onion
  • 1 lb. Velveeta cheese (regular or Mexican)
  • 1 carton sour cream
  • 1 doz. flour tortillas

Instructions

  1. Brown ground beef and onion in skillet; pour off excess grease.
  2. Season with salt and pepper to taste.
  3. Add 1/2 to 2/3 Velveeta cheese to ground beef until melted.
  4. Lightly butter and warm tortillas.
  5. Fill tortillas with ground beef mixture; roll and place in baking dish.
  6. Melt remainder of Velveeta and sour cream and pour over enchiladas.
  7. Bake at 350° for 20 to 30 minutes.
