Easy Chocolate Chip Torte

Ingredients

  • 30 chocolate chip cookies
  • 2 cups whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 to 3 nectarines or peaches
  • 2 tablespoons red currant jelly

Instructions

  1. In the bottom of a 9 x 3-inch spring-form pan, place 10 to 12 cookies in one layer.
  2. Crumble 3 to 5 cookies to fill in the spaces, using a total of 15 cookies.
  3. In a mixing bowl, whip 2 cups of whipping cream with 2 tablespoons of sugar and 1 teaspoon of vanilla extract until stiff peaks form.
  4. Spread a layer of whipped cream over the cookies in the pan.
  5. Arrange thinly sliced nectarines or peaches over the whipped cream layer.
  6. Repeat layers with remaining cookies, whipped cream, and fruit as desired.
  7. Drizzle the melted red currant jelly over the top layer of fruit.
  8. Chill the torte for at least 2 hours before serving to set.
