  • 2/3 c evaporated milk
  • 3/4 c butter or margarine
  • 12 oz semi-sweet chocolate pieces
  • 1 1/2 c Kroger Marshmallow Cream
  • 1/2 c pecan pieces
  • 1/2 tsp vanilla extract

Instructions

  1. Combine sugar, evaporated milk, and butter in a large heavy saucepan; heat to boiling.
  2. Stir constantly for about 5 minutes over medium heat until mixture reaches soft ball stage (238°F).
  3. Remove from heat.

  5. Pour mixture into a greased 13 x 3 x 2 inch pan.
  6. Allow to cool before cutting into squares.

Tips & Substitutions

For smoother fudge, make sure to stir continuously while boiling to prevent burning. If you prefer, you can substitute the semi-sweet chocolate with dark chocolate for a richer flavor or use almond butter instead of butter for a nutty twist. Adding a pinch of salt can enhance the sweetness, and if you're not a fan of pecans, walnuts or even hazelnuts work well too.

Serving Suggestions

Serve this rich fudge as a delightful dessert or snack. It pairs beautifully with coffee or tea, making it a great treat for gatherings. You can also serve it alongside a scoop of vanilla ice cream or a slice of Lucille Stock'S Poppy Seed Bread for a delicious contrast in flavors and textures.

Storage & Reheating

Store any leftover fudge in an airtight container at room temperature for up to a week. If you want to keep it longer, refrigerate it, which can extend its freshness to about two weeks. To reheat, cut a piece and microwave it for a few seconds until slightly warm, which can soften it for easier cutting.

Frequently Asked Questions

Can I use a different type of milk?

Yes, you can substitute evaporated milk with whole milk or coconut milk for a dairy-free option. However, using evaporated milk gives the fudge a creamier texture and richer flavor. If you choose to use a different milk, keep an eye on the cooking time as it may vary slightly.

How do I know when the fudge is done cooking?

The fudge is ready when it reaches the soft ball stage, which is around 238°F. You can test this by dropping a small amount of the mixture into cold water; if it forms a soft ball that you can easily squish, it’s perfect. Using a candy thermometer can help ensure accuracy.

Can I add other mix-ins to the fudge?

Absolutely! Feel free to customize your fudge by adding ingredients like dried fruits, chocolate chips, or even crushed cookies for added texture. Just be mindful not to overload the mixture, as it may affect the fudge's consistency and set.
