Ingredients

  • solid vegetable shortening for greasing pans
  • flour for dusting pans
  • 1 pkg plain yellow cake mix (do not use butter recipe)
  • 1 can (8 oz.) crushed pineapple and juice
  • 3 small bananas (mashed)
  • 1/2 c. water
  • 1/2 c. cooking oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp. ground cinnamon

Instructions

  1. Preheat oven to 350°. Lightly grease and flour two 9-inch cake pans, shaking out excess flour. Set pans aside. Place the cake mix, pineapple and juice, mashed bananas, water, oil, eggs, vanilla, and cinnamon in a large bowl. Blend with an electric mixer on low speed for 3 minutes. Batter should look thick and the fruit well blended. Pour batter into pans. Bake at 350° for about 30 minutes or until light brown.
