Ingredients

  • 2 c. sugar
  • 3 c. flour
  • 2/3 c. shortening
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 c. water
  • 4 egg whites
  • 1 tsp. baking powder

Instructions

  1. Mix sugar, flour, shortening, salt, and baking powder until creamy in a large bowl.
  2. Cream the mixture for 2 minutes until smooth.
  3. Beat egg whites until frothy. Add baking powder and beat until stiff.
  4. Gently fold the whipped whites and vanilla into the creamed mixture.
  5. Pour the batter into greased and floured pans (makes 2 thick or 3 thin layers).
  6. Bake at 375°F for 25 to 30 minutes.
  7. Cool and enjoy the cake, which also makes good cupcakes.
