Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 1/2 cups blueberries
  • 1/2 cup blueberries (mashed)
  • 2 cups plain flour

Instructions

  1. Heat oven to 375°F (190°C).
  2. Grease a muffin pan or line with foil baking cups.
  3. In a medium-sized bowl, beat butter until creamy.
  4. Beat in sugar until fluffy and pale.
  5. Beat in eggs, one at a time.
  6. Mix in vanilla, baking powder, and salt.
  7. Stir in mashed blueberries.
  8. Fold in half of the flour, then half of the milk.
  9. Add remaining flour and milk, folding gently until just combined.
  10. Fold in remaining blueberries.
  11. Divide batter evenly among muffin cups.
  12. Bake for 20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  13. Allow muffins to cool slightly before serving.
