Easy Orange Loaf

Ingredients

  • 1/4 c. shortening
  • 1 c. honey
  • 1 egg
  • 1 1/2 Tbsp. orange peel, grated
  • 2 1/2 c. flour, sifted
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 3/4 c. fresh orange juice
  • 3/4 c. pecans, finely chopped

Instructions

  1. Cream the shortening. Continue creaming while adding honey in a fine stream.
  2. Add egg and beat well. Add orange peel.
  3. Sift flour once; measure. Add baking powder, soda and salt and sift together.
  4. Add flour alternately with orange juice, a small amount at a time, to first mixture, beating after each addition until smooth.
  5. Stir in pecans; blend.
  6. Turn into a 9 x 5 x 3-inch greased loaf pan. Bake at 325° for 1 hour or until done.
  7. Let cool in pan 10 minutes. Turn out of pan and let stand until cool. Wrap in waxed paper or
  8. aluminum foil. Store overnight to blend flavors and for easy slicing.
  9. Makes 1 loaf.
