Easy Orange Loaf

- Cream the shortening. Continue creaming while adding honey in a fine stream.
- Add egg and beat well. Add orange peel.
- Sift flour once; measure. Add baking powder, soda and salt and sift together.
- Add flour alternately with orange juice, a small amount at a time, to first mixture, beating after each addition until smooth.
- Stir in pecans; blend.
- Turn into a 9 x 5 x 3-inch greased loaf pan. Bake at 325° for 1 hour or until done.
- Let cool in pan 10 minutes. Turn out of pan and let stand until cool. Wrap in waxed paper or
- aluminum foil. Store overnight to blend flavors and for easy slicing.
- Makes 1 loaf.
