Easy Party Chicken offers tender, flavorful chicken coated with onion soup mix, topped with tangy salad dressing and sweet apricot preserves, perfect for casual gatherings and family dinners.

Ingredients

  • 1 chicken, cut up or 6 thighs and 6 legs
  • 1 envelope onion soup mix
  • 8 oz. bottle Thousand Island salad dressing
  • 8 oz. jar apricot preserves

Instructions

  1. Place clean and dried chicken pieces in a greased baking dish, skin side up.
  2. Sprinkle onion soup mix evenly over the chicken.
  3. Pour Thousand Island salad dressing over the seasoned chicken.
  4. Drop spoonfuls of apricot preserves over the top.
  5. Cover the dish with foil and bake at 350°F (175°C) for 1 to 1 1/2 hours.
  6. Remove the cover during the last 15 minutes to allow the chicken to brown.
  7. Serve hot over cooked rice.
