Ingredients

  • 3 Tbsp. margarine
  • 2 medium zucchini, shredded
  • 3 slices soft bread
  • 1 egg
  • 1/2 c. shredded Swiss cheese
  • 1/8 tsp. pepper
  • salt
  • 4 chicken quarters
  • 2 Tbsp. honey

Instructions

  1. Prepare the stuffing by shredding the zucchini and tearing the bread into small pieces.
  2. In a 2-quart saucepan over medium heat, melt the margarine.
  3. Add the shredded zucchini and cook until tender, about 2 minutes, stirring frequently.
  4. Remove from heat.
  5. Stir in the torn bread pieces, egg, shredded Swiss cheese, pepper, and salt to the zucchini mixture.
  6. Preheat oven to 400°F (200°C).
  7. Loosen the skin on each chicken quarter by pushing your fingers between the skin and the meat to form a pocket.
  8. Stuff the pockets with the prepared filling.
  9. Place the chicken quarters in a 13 x 9-inch baking pan.
  10. Bake for 50 minutes or until the chicken is fork-tender.
  11. Remove the chicken to a serving platter.
  12. Brush the cooked chicken with honey and sprinkle with salt before serving.
