- Prepare the stuffing by shredding the zucchini and tearing the bread into small pieces.
- In a 2-quart saucepan over medium heat, melt the margarine.
- Add the shredded zucchini and cook until tender, about 2 minutes, stirring frequently.
- Remove from heat.
- Stir in the torn bread pieces, egg, shredded Swiss cheese, pepper, and salt to the zucchini mixture.
- Preheat oven to 400°F (200°C).
- Loosen the skin on each chicken quarter by pushing your fingers between the skin and the meat to form a pocket.
- Stuff the pockets with the prepared filling.
- Place the chicken quarters in a 13 x 9-inch baking pan.
- Bake for 50 minutes or until the chicken is fork-tender.
- Remove the chicken to a serving platter.
- Brush the cooked chicken with honey and sprinkle with salt before serving.
