Easy Spinach Roll-Yes
A nutritious and flavorful spinach roll filled with cottage cheese and Parmesan, wrapped in lasagna noodles, ideal for a quick, satisfying meal suitable for all spinach lovers.

- Cook the lasagna noodles according to package instructions, then drain and set aside.
- Thaw the frozen spinach and squeeze out excess moisture.
- In a bowl, combine the spinach, nonfat cottage cheese, egg white, and Parmesan cheese to make the filling.
- Spread a thin layer of spaghetti sauce on the bottom of a baking dish.
- Lay a cooked lasagna noodle flat, spread some of the spinach mixture along one edge, then roll it up.
- Place the rolled noodle seam-side down in the baking dish on top of the sauce.
- Repeat with remaining noodles and filling.
- Pour the remaining spaghetti sauce over the rolls.
- Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until heated through and slightly bubbly.
- Serve warm, optionally garnished with extra Parmesan or fresh herbs.
