A nutritious and flavorful spinach roll filled with cottage cheese and Parmesan, wrapped in lasagna noodles, ideal for a quick, satisfying meal suitable for all spinach lovers.

Ingredients

  • frozen spinach
  • nonfat cottage cheese
  • egg white
  • Parmesan cheese
  • lasagna noodles
  • spaghetti sauce

Instructions

  1. Cook the lasagna noodles according to package instructions, then drain and set aside.
  2. Thaw the frozen spinach and squeeze out excess moisture.
  3. In a bowl, combine the spinach, nonfat cottage cheese, egg white, and Parmesan cheese to make the filling.
  4. Spread a thin layer of spaghetti sauce on the bottom of a baking dish.
  5. Lay a cooked lasagna noodle flat, spread some of the spinach mixture along one edge, then roll it up.
  6. Place the rolled noodle seam-side down in the baking dish on top of the sauce.
  7. Repeat with remaining noodles and filling.
  8. Pour the remaining spaghetti sauce over the rolls.
  9. Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until heated through and slightly bubbly.
  10. Serve warm, optionally garnished with extra Parmesan or fresh herbs.
