Easy Stuffed Squash

Ingredients

  • 4 summer squash
  • 2/3 c. grated Cheddar cheese
  • 2 slices bread, crumbled
  • salt and pepper to taste
  • paprika

Instructions

  1. Prick squash several times with fork.
  2. Parboil about 10 minutes. Remove from heat; drain and cool. Slice in half.
  3. Scoop out the meat of the squash onto separate plate.
  4. Add crumbled bread, grated cheese, salt and pepper to taste.
  5. Spoon mixture back into squash boats.
  6. Bake at 375° for 10 to 15 minutes until cheese melts.
  7. Sprinkle on paprika to color.
