Easy To Do Quiche

Ingredients

  • 9-inch unbaked pie shell (make your own; I buy mine)
  • 1 c. (4 oz.) shredded Cheddar cheese
  • 2 Tbsp. grated Parmesan or Romano cheese
  • 1 c. vegetables, cooked and drained (zucchini, mushrooms, broccoli or spinach, used alone or in combination)
  • 6 eggs
  • 1 1/2 c. half and half (I use 2% milk)
  • 1 Tbsp. minced onion (can use instant)
  • 1/2 tsp. oregano leaves, crushed*
  • salt to taste

Instructions

  1. Preheat oven to 375°.
  2. Sprinkle pie shell with both cheeses. Add vegetables to pie shell.
  3. Beat eggs, milk, onion and oregano together in large bowl; pour over cheese and vegetables.
  4. Bake for 30 to 35 minutes, or until knife inserted near center comes out clean.
  5. Let stand a few minutes before serving.
  6. Serves 6.
