Ingredients

  • 2 pkg. dry yeast
  • 1/4 cup shortening
  • 1/2 cup plus 1 teaspoon sugar
  • 3 to 3 1/2 cups whole wheat flour
  • 3 to 3 1/2 cups all-purpose flour
  • 2 1/4 cups warm water
  • 2 eggs, well beaten
  • 2 teaspoons salt

Instructions

  1. Dissolve yeast in warm water in a large bowl.
  2. Add shortening, eggs, sugar, and salt to the yeast mixture.
  3. Beat together in a mixer or stir well. Gradually stir in enough of both flours to create a soft dough.
  4. Turn out the dough onto a floured surface.
  5. Knead until smooth.
  6. Place in a well-greased bowl, cover, and let rise in a warm place until doubled in size.
  7. Punch the dough down and roll out to the desired thickness.
  8. Cut the dough with a biscuit cutter.
  9. Place on a greased cookie sheet about 2 inches apart.
  10. Cover and let rise in a warm place for about 30 minutes.
  11. Bake at 375°F (190°C) for 15 minutes.
  12. Brush the tops with melted butter, if desired.
  13. Serve warm, optionally buttered.
