Light and creamy, this eclair cake combines vanilla pudding, Cool Whip, graham crackers, and chocolate flavor for a delightful no-bake dessert that's perfect for any occasion.

Ingredients

  • 2 boxes sugar-free instant vanilla pudding
  • 3.5 cups skim milk
  • 1 (8 oz.) lite Cool Whip
  • 1 box graham crackers
  • 2 packages liquid Choco-bake
  • 1.5 cups confectioners sugar
  • 2 teaspoons white Karo syrup
  • 2 teaspoons vanilla

Instructions

  1. Mix the sugar-free instant vanilla pudding with the skim milk until well combined.
  2. Beat in the lite Cool Whip until smooth and creamy.
  3. Spread a layer of graham crackers on the bottom of a 13 x 9-inch dish.
  4. Add a layer of the pudding mixture over the graham crackers.
  5. Place another layer of graham crackers on top of the pudding.
  6. Repeat the layers until all ingredients are used, ending with a layer of graham crackers on top.
