Ingredients

  • 1 kg eel
  • 1 handful sorrel
  • 1 handful spinach
  • Some chervil

Instructions

  1. Cut the eel into pieces of 4 to 5 cm each. Season with salt, pepper, thyme, and laurel.
  2. Melt butter in a large pan. Add chopped spices and lightly stew.
  3. Add the eel pieces and cover with white wine.
  4. Bring to cooking point, then cover with a lid and lower the heat. Let it stew for about 15 minutes.
  5. Thicken the sauce with egg yolks and add lemon juice.
  6. Serve warm or cold with brown bread or chips and a pint of beer.
