Ingredients

  • 1 large onion
  • 1 green pepper
  • 1 large eggplant
  • 1 small can stewed tomatoes
  • 1 clove garlic

Instructions

  1. Dice and sauté the onion and green pepper in a little olive oil along with the crushed garlic.
  2. Add diced eggplant and cook until tender.
  3. Simmer the mixture for about 30 minutes or until very tender.
  4. Add stewed tomatoes, salt, and pepper to taste, and cook for a few more minutes before serving.
