Ingredients

  • 2 qt. whole milk
  • 1 pt. buttermilk
  • 6 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. sugar

Instructions

  1. Using a heavy pan, heat the milk to near boiling.
  2. Beat the eggs until blended well.
  3. Add buttermilk, salt, and sugar to the eggs and beat again until blended.
  4. Slowly pour the egg mixture into the hot milk, stirring slowly with a wooden spoon.
  5. Allow the mixture to heat again for a few minutes, stirring slowly until it starts to separate.
  6. When whey starts to form, pour the mixture into a fine wire strainer to drain.
  7. After draining, set in the refrigerator to chill.
  8. Serve with bread and syrup or plain with syrup.
