Ingredients

  • 1 lb. raw eggplant in thick slices
  • 6 Tbsp. mayonnaise
  • 6 Tbsp. grated Romano or Parmesan cheese
  • 5 Tbsp. seasoned bread crumbs

Instructions

  1. Soak eggplant slices in cold water for 15 to 20 minutes, then drain and blot dry.
  2. Spread each eggplant slice lightly with mayonnaise on both sides.
  3. Press the mayonnaise-coated sides into grated Romano or Parmesan cheese.
  4. Then press into seasoned bread crumbs, ensuring both sides are lightly coated.
  5. Spray a shallow baking pan with cooking spray.
  6. Arrange the coated eggplant slices in a single layer on the prepared pan.
  7. Bake in a preheated oven at 475°F (246°C) for 5 minutes.
  8. Turn the slices over and bake for an additional 3 to 4 minutes until golden, crisp outside, and tender inside.
