Ingredients

  • 1 large onion, chopped fine
  • 3 Tbsp. cooked green chilies, chopped
  • 2 large ripe tomatoes, thinly sliced (1 can tomatoes can be used)
  • 1/4 c. oil
  • 1 large eggplant
  • 1 tsp. salt
  • 2 tsp. red chili powder
  • 1 c. grated cheese

Instructions

  1. Fry onion until soft. Add all other ingredients and cook until done (about 30 minutes). Sprinkle cheese over top when done.
