Ingredients

  • 1 large eggplant
  • 1 Tbsp. garlic
  • 1 tsp. salt
  • 1 tsp. olive oil
  • 1 1/2 tomatoes
  • 1/2 cup Feta cheese

Instructions

  1. Broil eggplant until soft, turning every 5 minutes.
  2. Peel and mash the inner part of the eggplant.
  3. Add garlic, salt, and olive oil to the mashed eggplant and mix well.
  4. Spread out the mixture on a serving dish.
  5. Sprinkle diced tomatoes and crumbled Feta cheese on top.
