Eggplant Sauce

Ingredients

  • 1/2 c. salad oil
  • 1 eggplant, peeled and cut in cubes
  • 1/2 c. onion, chopped
  • 1 clove garlic
  • 2 Tbsp. parsley
  • 1 can crushed tomatoes
  • 1 small can tomato paste
  • 1/2 c. red wine
  • 1 can mushrooms
  • 1 tsp. basil
  • 1 tsp. salt
  • 1 tsp. sugar

Instructions

  1. Fry eggplant, onion and garlic together.
  2. When lightly browned, add the rest of the ingredients and simmer for about 1 hour.
