- Preheat oven to 350°.
- Slice onion and green pepper. Cook in oil until tender, but not brown. Blend in flour.
- Add tomatoes, salt, chili powder and oregano (jalapenos, if you dare).
- Cook slowly until sauce thickens slightly, about 20 minutes.
- Pour into shallow baking dish. Drop eggs in, one at a time, carefully. Scatter cheese and olives on top and bake until firm.
