Ingredients

  • 1 can tomato wedges, drained
  • 1 medium green pepper, diced
  • 1 lb. diced ham
  • 1 lb. Velveeta, diced
  • 1 small onion, diced
  • fresh mushrooms, sliced
  • 1 doz. eggs, beaten
  • 1 c. sour cream

Instructions

  1. Layer first 6 ingredients in a 9 x 13-inch casserole dish. Mix eggs, sour cream and butter; pour over layered ingredients. Bake at 325° for 1 hour.
  2. Serves 6 to 8.
