- Cook bacon, remove. Throw a walnut-sized lump of butter into skillet and melt over low heat while peeling and slicing an onion or 2 to 3 shallots. Add onion and stir around. Clean and slice mushrooms, add and stir. Add opt leftovers. Add sliced banana & saute until browned. Beat eggs with 1 tsp cold water as if they'd done you a disservice. Turn up heat and at once pour in eggs. Draw mix from sides of pan to let uncooked part run under like omlette. Fold and serve.
