Eight-Grain Bread
Ingredients
- 2 1/4 cups warm water ⓘ
- 2 1/4 teaspoons yeast ⓘ
- 2 1/2 tablespoons honey ⓘ
- 2 1/2 tablespoons molasses ⓘ
- 1/4 cup oil ⓘ
- 2 cups whole wheat flour ⓘ
- 2 cups white flour ⓘ
- 1 tablespoon salt ⓘ
- 1/2 cup oats ⓘ
- 1/3 cup caraway seed ⓘ
- 1/3 cup sesame seeds ⓘ
- 1/3 cup cooked rice
- 1/3 cup rye flakes ⓘ
- 1/3 cup wheat bran ⓘ
- 1/3 cup poppy seed ⓘ
Instructions
- Stir together all wet ingredients.
- Mix all dry ingredients, except poppy seeds. Let stand for 5 minutes.
- Add the wet mixture to the dry mixture and mix together until just combined. Let stand for 10 minutes more.
- Knead, and let rise for 1 1/2 hour.
- Braid, and let rise 30 more minutes. Sprinkle poppy seeds on the outside.
- Bake at 190 C / 375 F for 45 minutes.
