Ingredients

  • 1 pkg yellow rice
  • 1/2 cup chopped onion
  • 1 can whole tomatoes
  • 1 can Cheddar cheese soup
  • 1 to 1.5 pounds ground beef
  • 1 pkg chili mix
  • 1/2 cup milk

Instructions

  1. Brown the ground beef and chopped onions in a skillet; drain excess fat.
  2. Add chili mix to the meat mixture according to package directions and simmer.
  3. Add canned whole tomatoes to the meat mixture and continue to simmer.
  4. Cook yellow rice according to package instructions.
  5. Line the bottom of a baking dish with cooked rice.
  6. Spread the meat mixture evenly over the rice.
  7. Mix Cheddar cheese soup with milk until smooth.
  8. Pour the cheese mixture over the meat layer.
  9. Bake at 350°F (175°C) for 20 minutes until bubbly and heated through.
