Ingredients

  • 1 can corned beef
  • 1 can enchilada sauce
  • 1 can sliced olives
  • Cheddar cheese, grated

  • corn tortillas

Instructions

  1. Heat corned beef in a pan until warmed through.
  2. Heat the enchilada sauce in a separate pan.
  3. Heat oil in a skillet and dip a corn tortilla in the oil to soften it.
  4. Dip the softened tortilla in the enchilada sauce to coat.
  5. Place the coated tortilla on a plate, fill with corned beef, and roll it up.
  6. Repeat with remaining tortillas.
  7. Top the rolled enchiladas with grated cheddar cheese.
  8. Sprinkle a few teaspoons of enchilada sauce over the cheese.
  9. Garnish with sliced olives and serve.
