Ingredients

  • 1 lb. ground beef
  • 2 cans corn
  • 2 cans Ranch Style beans
  • 2 cans Ro-Tel tomatoes
  • 1 can cream of mushroom soup
  • 1 pkg. large tortilla shells
  • 1 box Velveeta cheese

Instructions

  1. Brown the ground beef in a skillet.
  2. Mix the corn, Ranch Style beans, Ro-Tel tomatoes, and cream of mushroom soup together.
  3. Place the large tortilla shells in a pan.
  4. Scoop the beef mixture into each shell and roll them up.
  5. Place the rolled shells in the pan.
  6. Top the enchiladas with slices of Velveeta cheese.
  7. Bake for about 10 to 15 minutes until the cheese is melted and bubbly.
