Ingredients

  • 1 whole chicken
  • 1 lemon
  • 1/4 cup olive oil
  • 3 cloves garlic
  • 2 teaspoons dried basil
  • 2 teaspoons dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon brown sugar
  • 1/8 teaspoon pepper

Instructions

  1. In a blender, combine the juice of the lemon (save the rind), olive oil, garlic, dried basil, dried thyme, brown sugar, salt, and pepper.
  2. Blend until smooth.
  3. Place the whole chicken in a plastic bag.
  4. Pour the marinade ('goop') inside and outside of the chicken.
  5. Shove the lemon rinds inside the bird and seal the bag with a twist tie.
  6. Refrigerate for at least 1 day, but 2 days is better. Remove the rinds and place the chicken in a roasting pan.
  7. Pour the remaining marinade over the chicken.
  8. Bake in a 400°F oven for 45 to 60 minutes.
  9. Skim the fat and pour the marinade ('goop') over the chicken before serving.
