Ingredients

  • 5 cups sugar
  • 1 cup white syrup
  • 1 cup water
  • 3 egg whites
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups pecans

Instructions

  1. Cook water, sugar, and white syrup until it reaches the soft boil stage.
  2. Add half of the syrup mixture to stiffly beaten egg whites.
  3. Cook the remaining syrup to the crack stage by dropping it into cold water.
  4. Add this hot syrup to the egg whites, beating constantly.
  5. Stir in vanilla and pecans.
  6. Stir with a large spoon until the mixture loses its gloss.
  7. Pour into a buttered pan and allow to set.
