A hearty potato-based salad infused with vinegar and sugar, topped with crispy bacon, chopped endive, and onion, perfect for a flavorful appetizer or side dish.

Ingredients

  • 5 c. potato flakes
  • 5 c. water
  • 1 1/2 c. pet milk
  • 1 1/2 tsp. salt
  • 1/2 stick oleo or bacon drippings
  • 1/3 c. vinegar
  • 1 Tbsp. sugar

Instructions

  1. Mix potato flakes, water, pet milk, salt, oleo or bacon drippings, vinegar, and sugar in a saucepan.
  2. Bring the mixture to a boil, stirring constantly until thickened.
  3. Remove from heat and let it cool slightly.
  4. Add crumbled fried bacon, chopped endive lettuce, and chopped small onion to the mixture.
  5. Serve warm or chilled as desired.
