Escarole Medley
A hearty Mediterranean-inspired escarole dish featuring olives, mushrooms, and garlic, perfect for vegetable lovers and pairs well with rice or meat for a wholesome meal.

- Wash the escarole very well, then cut it up and add salt.
- Boil the escarole until tender, then drain and set aside.
- In a saucepan, brown the chopped garlic in olive oil.
- Be careful not to burn the garlic.
- Add the drained mushrooms and black olives to the saucepan.
- Cook for a few minutes until heated through.
- Add the cooked escarole to the saucepan and cook about 5 minutes longer.
- Add salt and pepper to taste.
- Serve with white rice or meat.
