Escarole Medley

A hearty Mediterranean-inspired escarole dish featuring olives, mushrooms, and garlic, perfect for vegetable lovers and pairs well with rice or meat for a wholesome meal.

Ingredients

  • 2 heads escarole
  • 1 medium can black pitted olives, drained
  • 1 medium can mushrooms, drained
  • 4 cloves garlic, chopped
  • 1/4 cup olive oil
  • salt

Instructions

  1. Wash the escarole very well, then cut it up and add salt.
  2. Boil the escarole until tender, then drain and set aside.
  3. In a saucepan, brown the chopped garlic in olive oil.
  4. Be careful not to burn the garlic.
  5. Add the drained mushrooms and black olives to the saucepan.
  6. Cook for a few minutes until heated through.
  7. Add the cooked escarole to the saucepan and cook about 5 minutes longer.
  8. Add salt and pepper to taste.
  9. Serve with white rice or meat.
