Everything Smashed Potatoes
Ingredients
- 1 1/2 pounds red potatoes, washed
- 3 cloves garlic ⓘ
- 2 tablespoons olive oil ⓘ
- 1 yellow onion, washed, peeled and sliced thinly ⓘ
- 8 ounces low fat cream cheese, softened ⓘ
- 1 tablespoon poppy seeds ⓘ
- 1 tablespoon toasted sesame seeds ⓘ
- 1/4 teaspoon ground black pepper ⓘ
- 1 pinch salt ⓘ
- 3/4 cup hot stock (either vegetable, chicken, or beef) ⓘ
Instructions
- Place the potatoes and garlic in a large stock pot and fill the pot with water to cover the vegetables. Place the potatoes and garlic in a large stock pot and fill the pot with water to cover the vegetables. Place the pot on the stove burner and bring the water to a boil. Boil the potatoes until they are tender, about 15 minutes.
- In a medium saute pan, heat the oil over medium heat and add the onions. Allow the onions to cook slowly, stirring every so often, until they are golden and soft
- Once the potatoes are tender, drain them and return them to the pot. Add the softened cream cheese and onions and mash with the back of a spoon or potato masher. Add the poppy seeds, sesame seeds, salt, and pepper and mash more to incorporate. Add the stock, a little at a time until the desired texture is reached. Serve hot, or save the leftovers and make potato cakes out of them.
