Ingredients

  • 3 cups sugar
  • 1 (1 lb.) box light brown sugar
  • 1 1/2 cups water
  • 1 cup light Karo syrup
  • 2 egg whites
  • 2 cups broken nuts
  • 1 teaspoon vanilla extract

Instructions

  1. Using a heavy saucepan, dissolve sugar, brown sugar, water, and light Karo syrup over medium heat.
  2. Bring the mixture to a boil and cook until the candy thermometer reaches 236°F.
  3. Pour half of the hot syrup slowly, while beating continuously, over the stiffly beaten egg whites.
  4. Cook the remaining syrup to 252°F.
  5. Beat the remaining hot syrup into the egg whites.
  6. Add broken nuts and vanilla extract to the mixture.
  7. Continue beating until the gloss of the candy lessens and it will stand up in peaks.
  8. Drop the mixture by teaspoonfuls onto waxed paper before it sets up completely.
