Ingredients

  • 3 c. fine ground pecans
  • 6 eggs
  • 1 1/2 c. granulated sugar
  • 2 1/2 Tbsp. plain flour
  • 1 tsp. baking powder

Instructions

  1. Beat egg yolks by hand for 15 minutes, gradually adding sugar.
  2. Add sifted flour and baking powder to the egg yolk mixture.
  3. Stir in the ground pecans.
  4. Beat egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the pecan mixture.
  6. Divide the batter into 2 layers and bake in a moderate oven preheated to 350°F for 30 minutes.
  7. Prepare whipped cream by sweetening and flavoring with vanilla extract.
  8. Spread the whipped cream between the layers, on the sides, and on top of the cake.
  9. Pile thick layers of whipped cream between the layers.
  10. Sprinkle the top and sides with ground pecans.
