Ingredients

  • 2 pkg. (10 oz.) frozen broccoli spears
  • 8 fillets of flounder (2 lb.)
  • 1 can cream of celery soup
  • 1/4 c. mayonnaise
  • 1 Tbsp. lemon juice

Instructions

  1. Cook and drain the broccoli spears.
  2. Place the fillets of flounder on a flat surface.
  3. Divide the cooked broccoli spears evenly among the fillets, placing them on top.
  4. Roll up each fillet with the broccoli inside and secure with toothpicks.
  5. Arrange the rolled fillets in a 2-quart shallow baking dish (12 x 8 x 2).
  6. In a bowl, mix the cream of celery soup, mayonnaise, and lemon juice to make the sauce.
  7. Pour the sauce over the rolled fillets.
  8. Bake at 350°F for 20 minutes until heated through and lightly browned.
