Ingredients

  • 1 lb. small flounder fillets
  • fresh lime wedges
  • 1/4 c. mayonnaise
  • 1/4 c. grated Parmesan cheese
  • 1 small or medium scallion or onion

Instructions

  1. Arrange fillets in a single layer on a foil-lined pan.
  2. Sprinkle the juice from the lime over the fish.
  3. Whisk together mayonnaise, Parmesan cheese, and minced scallions; spread over the fillets.
  4. Broil about 6 inches from high heat until fish is opaque when flaked with a fork and topping is golden, about 6 minutes.
  5. Remove fillets to hot dinner plates and serve at once with lime wedges.
